Salsa Verde is a vibrant, zesty sauce that brings an explosion of flavor to any dish.   • 6 medium tomatillos (about 1 pound)
  • 1 cup fresh cilantro leaves
  • 2 cloves garlic
  • 1 lime (juiced)
  • 1 jalapeño pepper (or serrano for more heat)
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 425°F (220°C). Rinse tomatillos and remove husks, cutting them in half.
  2. Place halved tomatillos skin-side up on a baking sheet and roast for 15-20 minutes until blistered.
  3. In a blender, combine roasted tomatillos, cilantro, garlic, lime juice, jalapeño, and salt. Blend until desired consistency is reached.
  4. Taste and adjust seasoning as needed. Chill in the refrigerator for at least 30 minutes before serving.
