  • 8 oz spaghetti
  • 4 cloves fresh garlic, thinly sliced
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt, to taste

Instructions

  1. Boil salted water in a large pot over high heat. Add spaghetti and cook until al dente according to package instructions, stirring occasionally.
  2. In a separate pan, heat olive oil over medium heat. Add sliced garlic and sauté until golden brown (about 2 minutes).
  3. Remove from heat and stir in lemon zest and juice.
  4. Drain spaghetti (reserve some cooking water) and add it to the pan with the garlic-lemon sauce. Toss well, using reserved pasta water as needed for creaminess.
  5. Stir in grated Parmesan cheese until melted. Garnish with chopped parsley before serving.
