  • 2 fresh lemons (zested and juiced)
  • 3 garlic cloves (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley (chopped)
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot; cook pasta until al dente (8-10 minutes). Drain, saving some pasta water.
  2. Sauté the Chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sauté until golden brown on both sides (6-7 minutes each side). Remove from pan.
  3. Add Garlic & Lemon Zest: In the same skillet, reduce heat and add minced garlic and lemon zest for about 30 seconds until fragrant.
  4. Create the Sauce: Pour in chicken broth; bring to a simmer. Stir in heavy cream and Parmesan cheese until smooth—bubble for 3-5 minutes.
  5. Combine: Add drained pasta to the skillet with chicken and sauce; toss well to coat evenly.
  6. Finish & Serve: Stir in chopped parsley just before serving; enjoy warm with extra Parmesan if desired.
