  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup salsa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • 3 cups crushed tortilla chips
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until no longer pink.
  3. Stir in taco seasoning and a splash of water; mix well.
  4. Add salsa, black beans, and corn; simmer until heated through.
  5. In a greased baking dish, layer half of the crushed tortilla chips, half of the meat mixture, and one cup of cheese. Repeat layers.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  7. Garnish with chopped green onions before serving.
