  • 1 lb lean ground beef
  • 6 corn or flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup chopped bell peppers (any color)
  • 1 packet taco seasoning (1 oz)
  • 1 cup sour cream (for topping)
  • Chopped cilantro (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Add chopped bell peppers and cook until tender, about 5 minutes.
  3. Stir in taco seasoning and black beans; cook for an additional 3 minutes.
  4. In a greased baking dish, layer half of the tortillas at the bottom. Top with half of the beef mixture and half of the cheese.
  5. Repeat layers with remaining tortillas, beef mixture, and cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil for the last 10 minutes to brown the cheese.
  7. Serve hot with sour cream and cilantro on top.
