Moussaka is a beloved Mediterranean dish that layers tender roasted eggplant, savory spiced meat, and rich béchamel sauce.   • 2 medium eggplants (about 1.5 lbs)
  • 1 lb ground beef
  • 1 lb ground lamb (or turkey)
  • 1 can (14 oz) high-quality tomato sauce
  • 1 large onion, chopped
  • 3 tbsp olive oil
  • 4 cups milk
  • 1/2 cup flour
  • 4 tbsp butter
  • 1/4 tsp nutmeg
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice eggplants into 1/4-inch rounds, sprinkle with salt, and let sit for 30 minutes. Rinse and pat dry.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add ground beef and lamb. Cook until browned.
  4. Stir in tomato sauce with oregano and cinnamon; simmer for 15 minutes.
  5. In a saucepan, melt butter over medium heat. Whisk in flour, cooking until golden brown. Gradually add milk, stirring until thickened (5-7 minutes). Season with salt, pepper, and nutmeg.
  6. Layer half the eggplants in a baking dish followed by half the meat mixture. Repeat layers and top with béchamel sauce and Parmesan.
  7. Bake uncovered for about 45 minutes or until golden brown on top. Let it rest for at least 15 minutes before serving.
