  • 3 cloves garlic, minced
  • 6 cups tortilla chips
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • Cilantro (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onions and garlic; sauté until fragrant (3-4 minutes).
  3. Add diced chicken and taco seasoning; cook until chicken is browned on all sides (6-7 minutes).
  4. Stir in diced tomatoes (with juices) and black beans; simmer for an additional 5 minutes.
  5. In a greased baking dish, layer half of the tortilla chips followed by half of the chicken mixture and a sprinkle of cheese. Repeat layers.
  6. Bake uncovered for 25-30 minutes until bubbly and golden brown.
