  • 4 large flour tortillas
  • 6 large eggs
  • 4 slices of bacon or 1 cup cooked sausage
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1/2 cup chopped onions
  • 1/4 cup salsa or hot sauce (to taste)
  • Fresh cilantro (optional)

Instructions

  1. Gather all ingredients and chop bell peppers and onions.
  2. In a skillet over medium heat, cook bacon until crispy; set aside and drain on paper towels.
  3. Sauté onions and bell peppers in the same skillet for about 3-4 minutes.
  4. Whisk eggs in a bowl and pour into the skillet with veggies; stir gently until scrambled and creamy.
  5. Add cheese to the egg mixture while still on heat, allowing it to melt.
  6. Lay tortillas flat, fill with egg mixture, bacon (or sausage), salsa, and cilantro. Roll tightly to form burritos.
