  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 cup low-sodium chicken broth
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp honey or brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice

Instructions

  1. Pat chicken thighs dry; season with salt and pepper.
  2. Optional: Sear in a hot skillet with olive oil until golden brown on both sides (3-4 minutes per side).
  3. Place seared thighs in the crockpot; sprinkle minced garlic and herbs over them.
  4. In a bowl, mix chicken broth, soy sauce, honey/brown sugar, and lemon juice; pour over chicken.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Remove chicken; whisk cornstarch with cold water, stir into remaining liquid in the crockpot until thickened (5-10 minutes).
