  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons fajita seasoning
  • 6 flour tortillas (or corn tortillas)
  • Optional toppings: guacamole, salsa, shredded cheese

Instructions

  1. Slice the chicken breasts into thin strips and set aside.
  2. In a bowl, combine olive oil and fajita seasoning. Toss chicken strips to coat evenly and let marinate for at least 30 minutes.
  3. Heat a large skillet over medium-high heat. Add the onions and sauté until translucent (about 3 minutes), then add the sliced bell peppers and cook until tender (about 4 minutes).
  4. Push the vegetables to one side of the skillet and add the marinated chicken to the other side. Cook until golden brown on both sides (about 5-7 minutes).
  5. Mix the cooked chicken with vegetables in the skillet for an additional minute.
  6. Warm tortillas on a separate burner or in the microwave just before serving.
  7. Serve hot with your choice of toppings.
