  • 1 lb flank steak
  • 2 tbsp lime juice
  • 2 tsp fajita seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large sweet onion, sliced
  • 2 tbsp olive oil (for cooking)
  • 4 flour tortillas

Instructions

  1. Marinate the flank steak in lime juice and fajita seasoning for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat and add the marinated steak. Cook for about 5-7 minutes until browned on both sides. Remove from skillet and let rest.
  3. In the same skillet, add sliced onions and bell peppers. Sauté for about 4-5 minutes until softened.
  4. Slice the rested steak against the grain into thin strips and return it to the skillet with the vegetables. Stir to combine and heat through.
  5. Warm tortillas in a separate pan or over an open flame until pliable. Fill each tortilla with the beef and vegetable mixture and top with your choice of toppings.
