  • 1 lb medium shrimp, peeled and deveined
  • 1 cup diced onion (about 1 medium onion)
  • 1 cup diced bell peppers (mixed colors)
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 2 tsp Cajun seasoning
  • 2 green onions, chopped
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, bell peppers, and minced garlic until softened (about 5 minutes).
  2. Add sliced Andouille sausage; cook until browned. Stir in shrimp; cook until pink and opaque (about 2-3 minutes).
  3. Mix in uncooked rice and canned tomatoes (juice included) until evenly coated.
  4. Pour in chicken broth and Cajun seasoning; bring to a gentle boil while stirring occasionally.
  5. Lower the heat, cover the pot, and simmer for 20-25 minutes until rice is tender and liquid is mostly absorbed.
  6. Remove from heat; fluff rice gently with a fork. Garnish with chopped green onions before serving.
