  • 1 whole turkey (1214 pounds)
  • 1/4 cup olive oil
  • 3 tbsp fresh thyme
  • 3 tbsp fresh rosemary
  • 3 tbsp fresh sage
  • 6 garlic cloves
  • 1 lemon, cut into wedges
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 cups vegetable broth

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove giblets from the turkey cavity and rinse under cold water. Pat dry with paper towels.
  3. Rub olive oil generously over the turkey skin. Season inside and out with salt, pepper, and fresh herbs; stuff some herbs inside the cavity.
  4. Place lemon wedges and garlic cloves inside the cavity for added flavor.
  5. Transfer the turkey to a roasting pan breast-side up and pour vegetable broth into the bottom.
  6. Bake for approximately 3-4 hours or until an instant-read thermometer reads 165°F (74°C) in the thickest part of the thigh, basting every hour.
