  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves fresh garlic, minced
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup medium dry Marsala wine
  • 1 cup low-sodium chicken broth
  • Fresh parsley, chopped for garnish
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Slice chicken into manageable pieces and chop garlic and mushrooms.
  2. Heat olive oil and butter in a large skillet over medium heat. Season chicken with salt and pepper, then sear until browned (about 5 minutes per side). Remove from skillet.
  3. Add minced garlic and sliced mushrooms to the skillet. Sauté until mushrooms are tender (about 4-5 minutes).
  4. Pour in Marsala wine to deglaze the pan, scraping up fond. Simmer until reduced by half.
  5. Stir in chicken broth and return chicken to the skillet. Simmer gently for about 10 minutes until sauce thickens.
  6. Sprinkle with fresh parsley before serving.
