Whoopie pies are the ultimate dessert, combining soft, cake-like cookies with a creamy filling that melts in your mouth. Perfect for celebrations or cozy nights at home, these delightful treats are easy to make and can be customized to suit any occasion.

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1/2 cup heavy cream
  • 1 cup confectioners’ sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy (3-5 minutes).
  4. Add eggs one at a time and mix well; then stir in vanilla extract.
  5. Gradually add the dry mixture to the wet ingredients until just combined.
  6. Scoop tablespoonfuls of batter onto prepared sheets about 2 inches apart.
  7. Bake for 10-12 minutes until set; cool on sheets for a few minutes before transferring to a wire rack.
  8. Whip heavy cream with confectioners’ sugar until soft peaks form; fill between similar-sized cakes.
  9. Press gently to create that classic whoopie pie shape.
