  • 4 tbsp unsalted butter
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup sharp cheddar cheese, shredded
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 1/4 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake sweet potatoes on a lined baking sheet for 45-60 minutes until tender.
  3. Let cool slightly, then cut in half and scoop out most of the flesh into a bowl.
  4. Mix the scooped flesh with butter, sour cream, cheese, salt, pepper, and cinnamon until fluffy but textured.
  5. Spoon the mixture back into potato skins, top with extra cheese, and bake for another 15-20 minutes until golden brown.
  6. Serve warm with chopped green onions on top.
