  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 2 large carrots, thinly sliced
  • 1 cup long-grain white rice
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tsp garlic powder
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 green onions, finely chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the seasoned chicken breasts for about 5-7 minutes per side until golden brown. Remove and chop into bite-sized pieces.
  3. In the same skillet, combine chopped chicken, broccoli florets, sliced carrots, and uncooked rice. Stir well.
  4. In a bowl, whisk together soy sauce, brown sugar, garlic powder, sesame oil, and cornstarch until smooth. Pour over the chicken-veggie-rice mixture.
  5. Cover with foil and bake for about 30 minutes; remove the foil during the last 10 minutes for a golden finish.
  6. Garnish with chopped green onions before serving.
