  • 2 cups sweet corn (fresh or frozen)
  • 1 can (15 oz) creamed corn
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 cup sour cream (full-fat recommended)
  • 1 cup shredded sharp cheddar cheese (divided)
  • 1/2 cup butter (melted)
  • 2 large eggs (beaten)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine sweet corn, creamed corn, Jiffy mix, sour cream, melted butter, beaten eggs, salt, and pepper. Mix well.
  3. Fold in half of the shredded cheddar cheese, reserving the rest for topping.
  4. Pour the mixture into the greased baking dish and spread evenly.
  5. Bake for 45 minutes or until golden brown on top and set in the center.
  6. Sprinkle with remaining cheddar cheese and let sit for 10 minutes before serving.
