  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar (dark preferred)
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 1 teaspoon sesame oil

Instructions

  1. Cut chicken into bite-sized pieces. Wash and chop all vegetables.
  2. In a bowl, mix soy sauce, garlic, and sesame oil. Add chicken pieces and marinate for at least 15 minutes.
  3. Heat oil in a skillet over medium-high heat. Sauté onions and bell peppers until softened (about 5 minutes).
  4. Add pineapple and marinated chicken to the skillet. Stir-fry until chicken is cooked through (7-10 minutes).
  5. In a separate bowl, whisk together brown sugar, rice vinegar, ketchup, and water. Pour into the skillet once the chicken is ready.
