  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup fresh spinach (chopped)
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1 cup marinara sauce (plus more for topping)
  • 1 cup shredded mozzarella cheese (divided)
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Boil salted water in a large pot.
  2. Cook pasta shells for about 8-10 minutes until al dente. Drain and let cool.
  3. In a bowl, combine ricotta, spinach, egg, Italian seasoning, half the mozzarella, salt, and pepper. Mix well.
  4. Stuff each shell with the ricotta mixture and place them upright in a baking dish with marinara sauce at the bottom.
  5. Pour remaining marinara over the shells and sprinkle with leftover mozzarella and parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
