  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries (sliced)
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, flour, brown sugar, baking powder, and salt.
  3. Melt the unsalted butter in a microwave-safe bowl and let it cool slightly before adding it to the dry mixture along with vanilla extract.
  4. Mix in honey or maple syrup until you have a sticky dough.
  5. Press half of the oat mixture into the bottom of the prepared pan. Layer sliced strawberries evenly over this base.
  6. Crumble the remaining oat mixture on top of the strawberries.
  7. Bake for 30-35 minutes or until golden brown. Allow to cool completely before slicing into squares.
