  • 1 cup tempura flour
  • 1 cup ice-cold water
  • 2 cups vegetable oil (canola or peanut)
  • ¼ cup soy sauce, 2 tbsp mirin, 1 tsp sesame oil

Instructions

  1. Prepare the shrimp by peeling and deveining them, leaving the tails on if desired. Rinse under cold water and pat dry.
  2. In a bowl, mix tempura flour with ice-cold water until just blended; lumps are okay.
  3. Heat vegetable oil in a deep pan to 350°F (175°C). Test readiness by dropping in a small amount of batter.
  4. Dip each shrimp in the batter and fry in hot oil for about 3-4 minutes per side until golden brown. Remove with a slotted spoon.
  5. Drain excess oil on paper towels and serve immediately with dipping sauce.
