Ingredients

Scale
  • 1 cup long-grain basmati rice
  • 1/4 teaspoon saffron threads
  • 2 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. Soak saffron threads in 2 tablespoons of warm chicken broth for maximum flavor infusion.
  3. In a medium saucepan, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook for an additional minute.
  4. Stir in the rinsed rice, coating each grain with oil.
  5. Add the infused saffron with its soaking liquid and remaining chicken broth. Season with salt and pepper, bringing the mixture to a gentle boil.
  6. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until all liquid is absorbed. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
