  • 2 lbs ripe tomatoes (Roma or heirloom)
  • 1 cup fresh basil leaves
  • 6 whole garlic cloves
  • 3 tbsp extra virgin olive oil
  • 2 cups low-sodium vegetable broth
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the tomatoes and place cut-side up on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Nestle garlic cloves between the tomatoes. Roast for 30 minutes until caramelized.
