  • 1 (4-5 lb) whole chicken
  • 4 medium carrots, chopped
  • 1 lb baby potatoes, halved
  • 2 medium sweet onions, quartered
  • 3 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Lightly coat a roasting pan with nonstick spray or olive oil.
  2. Rinse the chicken under cold water and pat dry. Season generously inside and out with salt, pepper, rosemary, and thyme.
  3. Chop carrots, potatoes, and onions into bite-sized pieces.
  4. Place seasoned chicken in the roasting pan and arrange chopped vegetables around it. Drizzle olive oil over everything.
  5. Roast for about 1 hour and 15 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest for 10-15 minutes before serving.
