  • 8 medium rice paper wrappers
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1 cup cucumber strips
  • ½ cup fresh mint leaves
  • ½ cup fresh cilantro leaves
  • 8 oz cooked shrimp or marinated tofu
  • ½ cup peanut or hoisin sauce (for dipping)

Instructions

  1. Prepare your workspace by clearing the kitchen counter and gathering all ingredients.
  2. Soften one rice paper wrapper in warm water for 10-15 seconds until pliable. Lay it flat on a clean surface.
  3. Place a few pieces of lettuce at the bottom third of the wrapper, followed by carrots, cucumber, herbs, and shrimp or tofu.
  4. Fold the sides over the fillings first, then roll tightly from the bottom up.
  5. Repeat until all wrappers are filled. Keep finished rolls covered with a damp cloth.
  6. Serve with dipping sauce on the side.
