  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 large eggs (room temperature)
  • 8 oz cream cheese (full-fat)
  • 2 cups powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, whisk together pumpkin puree, eggs, and granulated sugar until smooth.
  3. In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Spread the batter evenly in the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
  5. Once baked, immediately invert onto a clean kitchen towel dusted with powdered sugar. Roll up gently while warm and set aside to cool completely.
  6. For the frosting, beat together cream cheese, powdered sugar, and vanilla extract until fluffy.
  7. Unroll the cooled cake carefully and spread frosting evenly across the surface. Roll it back up tightly.
  8. Wrap in plastic wrap and refrigerate for at least one hour before slicing into rounds.
