  • 1 cup pumpkin puree (100% pure)
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom of an 8×8-inch baking dish.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until fluffy. Blend in pumpkin puree and vanilla extract.
  3. Add eggs one at a time, mixing just until combined. Stir in cinnamon, nutmeg, and salt.
  4. Pour filling over the crust evenly and bake for 30-35 minutes until set but slightly jiggly in the center.
