Instructions

  1. Preheat your oven to 400°F (200°C). Cut the pumpkin in half, scoop out the seeds, and roast cut-side down on a baking sheet lined with parchment paper for about 45 minutes until tender.
  2. Allow the roasted pumpkin to cool slightly, then scoop out the flesh into a blender or food processor. Add lemon juice and blend until creamy.
  3. In a medium saucepan over low heat, combine the blended pumpkin with brown sugar, cinnamon, nutmeg, cloves, and water. Stir frequently for about 10 minutes until well mixed.
