  • 46 pounds prime rib roast
  • 3 tablespoons kosher salt
  • 2 tablespoons freshly cracked black pepper
  • 6 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 cup low-sodium beef broth

Instructions

  1. Remove the prime rib from the fridge and let it sit at room temperature for 1 hour. Preheat your oven to 450°F (232°C).
  2. Season generously with salt and pepper.
  3. In a bowl, combine minced garlic, rosemary, thyme, and olive oil to form an herb paste. Rub this mixture all over the meat.
  4. Place the roast bone-side down on a rack in a roasting pan and roast for 20 minutes.
  5. Reduce the oven temperature to 325°F (163°C) and pour beef broth into the pan.
  6. Continue roasting until the internal temperature reaches about 130°F (54°C) for medium-rare (approximately 1-1.5 hours).
  7. Remove from oven and let rest tented with foil for at least 20 minutes before slicing.
