  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 8 oz tomato sauce
  • 1/4 cup fresh cilantro, chopped
  • 2 tsp cumin
  • 2 tsp oregano
  • 2 tsp paprika
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Cut chicken into bite-sized pieces, dice onion, and chop bell peppers.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until translucent (3-4 minutes).
