  • 2 green plantains
  • 4 garlic cloves, minced
  • 1 tsp cumin powder
  • 2 tbsp olive oil (plus more for frying)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a bowl, combine minced garlic, cumin powder, salt, pepper, and lemon juice. Add the chicken thighs, ensuring they’re well-coated. Let marinate for at least 30 minutes.
  2. Peel and slice the green plantains diagonally into thick pieces.

  4. In the same skillet, add more oil if needed and place marinated chicken thighs skin-side down. Cook until browned (approximately 6-8 minutes on each side) until fully cooked through.
