  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 cup bell pepper (red or green), diced
  • 2 cups ripe tomatoes, diced (or 14 oz canned diced tomatoes)
  • 1/2 cup green olives, sliced (preferably pimento-stuffed)
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • Cilantro (optional), for garnish

Instructions

  1. Heat a large skillet over medium heat and add 2 tablespoons olive oil. Sauté the chopped onions until translucent.
  2. Add minced garlic and diced bell pepper; stir for about 3-4 minutes until softened.
  3. Incorporate the ground beef, breaking it apart with a spatula. Cook until browned evenly (5-7 minutes).
  4. Stir in the diced tomatoes along with their juices. Season with cumin, oregano, salt, and pepper; mix well.
  5. Add sliced olives and bay leaves; simmer on low heat for 15 minutes, stirring occasionally.
  6. Remove bay leaves before serving hot over rice or in warm tortillas. Garnish with cilantro if desired.
