  • 8 oz flat rice noodles
  • 1 lb protein (chicken, shrimp, or tofu)
  • 2 large eggs
  • 4 green onions, finely sliced
  • 1 cup bean sprouts
  • 3 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp brown sugar
  • Juice of 1 lime

Instructions

  1. Soak the rice noodles in hot water for about 15 minutes until softened but firm. Drain and set aside.
  2. In a bowl, whisk together tamarind paste, soy sauce, fish sauce, brown sugar, and lime juice until smooth.
  3. Heat oil in a large skillet over medium-high heat. Add marinated protein and cook for 5-7 minutes until browned.
  4. Toss in the soaked noodles and prepared sauce; stir-fry until well combined.
  5. Move noodles to one side and scramble the eggs on the other side of the pan before mixing everything together along with bean sprouts and green onions.
  6. Stir-fry for an additional minute or two until heated through; serve hot with extra lime wedges.
