  • 8 oz wide rice noodles
  • 1 cup chicken (sliced) or tofu
  • 1 cup broccoli florets
  • 1 medium carrot (julienned)
  • 2 large eggs
  • 2 tbsp vegetable oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 2 tbsp oyster sauce or mushroom sauce

Instructions

  1. Soak the wide rice noodles in warm water until pliable (about 30 minutes). Drain and set aside.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Stir-fry the protein until cooked through (5-7 minutes). Remove from skillet.
  3. In the same skillet, add another drizzle of oil if needed. Sauté broccoli and carrots until tender (3-5 minutes).
  4. Push veggies to one side; crack eggs into the other side and scramble until slightly set before combining with noodles.
  5. Pour in soy sauces, sugar, and oyster sauce; stir well to coat all ingredients evenly. Cook for an additional two minutes until heated through.
  6. Serve hot, garnished with fresh herbs or lime wedges if desired.
