  1. Preheat oven to 350°F (175°C). In a large bowl, cream together butter, brown sugar, and granulated sugar until smooth and fluffy (about 3 minutes).
  2. Beat in the egg and vanilla extract until fully incorporated.
  3. In another bowl, whisk together flour, oats, baking soda, and salt. Gradually add this mix to the wet ingredients and stir until just combined.
  4. Scoop tablespoon-sized portions onto lined baking sheets, leaving space between each.
  5. Bake for 12-15 minutes or until edges are lightly browned but centers remain soft.
  6. While cooling on wire racks, beat cream cheese with powdered sugar and vanilla for the filling.
  7. Once cookies have cooled completely, spread or pipe filling onto one cookie and sandwich with another.
