  • 1 cup low-sodium vegetable broth
  • 1 cup full-fat sour cream (or Greek yogurt)
  • 2 cups wide egg noodles (or rice)
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil (or butter)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by cleaning and slicing the mushrooms.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent, then add minced garlic and cook until fragrant.
  3. Add sliced mushrooms to the skillet and cook until browned and their moisture is released (about 5-7 minutes), stirring occasionally.
  4. Pour in vegetable broth and stir in Dijon mustard. Simmer for about 3 minutes to meld flavors.
  5. Reduce heat to low and fold in sour cream. Adjust seasoning with salt and pepper as needed.
