  • 1 cup mint chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
  3. Add eggs one at a time and mix in vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined, then fold in the mint chocolate chips.
  5. Scoop tablespoon-sized dollops of dough onto lined baking sheets with space between each cookie.
  6. Bake for 10-12 minutes or until edges are golden while centers remain slightly underbaked. Let cool on the baking sheet for five minutes before transferring to wire racks.
