Mexican rice casserole is a delightful fusion of fluffy rice, seasoned ground beef, colorful bell peppers, and melty cheese baked to golden perfection.   • 1 cup long-grain white rice
  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced bell peppers (mixed colors)
  • 1 can (14.5 oz) diced tomatoes with juices
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 green onions, chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef until no longer pink. Add diced bell peppers and sauté until softened.
  3. Stir in black beans, diced tomatoes, taco seasoning, and cooked rice. Mix well.
  4. Layer half of the mixture in the baking dish and top with half of the cheese. Add the remaining mixture and finish with the rest of the cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
  6. Garnish with chopped green onions before serving.
