  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup salsa (mild or spicy)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup chopped bell peppers (mixed colors)
  • ¼ cup fresh cilantro (optional for garnish)
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté diced chicken until golden brown and cooked through (about 7-10 minutes). Set aside.
  3. In the same skillet, stir in chopped bell peppers, black beans, corn, salsa, cumin, and chili powder. Cook until heated through (about 5 minutes).
  4. In a baking dish, layer half of the chicken mixture on the bottom. Sprinkle with half of the shredded cheese. Repeat with remaining chicken mixture and cheese on top.
  5. Bake for 20-25 minutes until bubbling and golden brown.
  6. Let cool for about 10 minutes before garnishing with cilantro. Serve warm.
