  • 1 cup plain breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg
  • 2 tsp Italian seasoning
  • 2 cups marinara sauce (store-bought or homemade)
  • 4 crusty sub rolls
  • 1 cup shredded mozzarella cheese
  • Fresh basil (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, and Italian seasoning. Mix gently.
  2. Form mixture into 1-inch meatballs and place on a parchment-lined baking sheet. Bake for 20 minutes until golden.
  3. In a skillet over medium heat, simmer marinara sauce. Add baked meatballs and let simmer for 10 minutes.
  4. While meatballs are simmering, slice sub rolls open and toast them briefly in the oven until golden.
  5. Assemble each sub with several meatballs, marinara sauce, and top generously with mozzarella cheese.
  6. Return subs to the oven at 350°F (175°C) for 5-7 minutes until cheese is melted.
