  • 1 cup fresh breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 large eggs
  • 2 cans (14 oz each) high-quality canned tomatoes (like San Marzano)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, parsley, eggs, salt, and pepper. Mix gently until combined without overworking.
  2. Shape into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides for about 5-7 minutes per batch; remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add canned tomatoes and oregano; let simmer for 5 minutes.
  5. Return meatballs to the skillet, nestling them into the sauce. Simmer together for at least 15-20 minutes.
