  • 4 medium flour tortillas

  • 1 cup diced onions
  • 2 tsp taco seasoning
  • 1/2 cup sour cream (for dipping)
  • 1/2 cup salsa (for dipping)

Instructions

  1. Prepare your ingredients by chopping bell peppers and onions.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  3. Add chopped onions and bell peppers to the skillet; sauté until softened.
  4. Sprinkle taco seasoning and a splash of water over the mixture; stir and simmer for about 5 minutes.
  5. On one half of each tortilla, layer cheese followed by the beef mixture, then fold over.
  6. Cook each quesadilla in a non-stick skillet over medium heat for 3-4 minutes per side until golden brown.
  7. Remove from heat, slice into wedges, and serve with sour cream and salsa.
