  • 4 medium Russet potatoes (about 1.5 lbs), cut into fries
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut the potatoes into even fries.
  3. Soak the cut fries in cold water for 30 minutes to remove excess starch.
  4. Drain and pat dry the soaked fries completely.
  5. Toss the dried fries in a bowl with olive oil, minced garlic, salt, and pepper until well coated.
  6. Spread fries on a parchment-lined baking sheet and bake for 25-30 minutes, flipping halfway through until golden brown.
  7. Remove from oven and immediately sprinkle with parmesan cheese; toss gently to coat.
