  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves fresh garlic, minced
  • 6 medium tomatillos (about 1 pound), husked and chopped
  • 1/2 cup fresh cilantro leaves
  • 1 cup shredded Queso Fresco or Monterey Jack cheese
  • 8 corn tortillas (or flour tortillas)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté the onion until translucent.
  3. Add chicken breasts, season with salt and pepper, and cook until fully cooked (6-8 minutes per side). Shred once cool.
  4. In a blender, combine tomatillos, garlic, cilantro, and sautéed onions; blend until smooth. Adjust seasoning if necessary.
  5. Warm tortillas briefly in a skillet or microwave to make them pliable. Fill each tortilla with shredded chicken and roll tightly.
  6. Place the rolled tortillas seam-side down in a baking dish. Pour tomatillo sauce over the top and sprinkle with cheese.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Let cool slightly before serving; garnish with additional cilantro or avocado if desired.
