  • 8 oz fettuccine or penne pasta
  • 2 cups fresh basil leaves
  • 3 cloves garlic, minced
  • 1/4 cup pine nuts, toasted
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup extra virgin olive oil
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot, add pasta, and cook according to package instructions until al dente.
  2. In a food processor, blend basil, garlic, pine nuts, and Parmesan until finely chopped.
  3. With the processor running, drizzle in olive oil until smooth. Then incorporate heavy cream and blend until well combined.
  4. Drain the cooked pasta (do not rinse) and return it to the pot over low heat. Pour in the pesto sauce and mix well.
