  • 1 cup long-grain rice
  • 3 cups low-sodium chicken broth
  • 4 oz cream cheese
  • 3 cloves fresh garlic, minced

  • 1 medium onion, chopped
  • 2 tbsp extra virgin olive oil
  • Salt, pepper, and paprika to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear seasoned chicken breasts until golden brown, about 6-8 minutes per side. Remove from pot.
  2. In the same pot, sauté chopped onions and garlic until fragrant, about 2-3 minutes.
  3. Stir in long-grain rice until coated with oil; pour in chicken broth while scraping up any bits stuck to the bottom.
  4. Return chicken to the pot and add cream cheese cubes. Stir until combined and creamy.
  5. Add mixed vegetables; cover and simmer on low for 20-25 minutes or until rice is tender and liquid is absorbed.
  6. Season to taste before serving hot.
