  • 1 cup large-curd cottage cheese
  • 4 large eggs
  • 1 cup fresh spinach (or ½ cup frozen, thawed and drained)
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, sautéed
  • ½ cup whole milk (or heavy cream)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Roll out the pie crust into a 9-inch pie pan and pre-bake for about 10 minutes until lightly golden.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent (about 5 minutes).
  3. In a mixing bowl, whisk together eggs, cottage cheese, milk or cream, salt, and pepper until smooth. Fold in the sautéed onions and spinach.
  4. Stir in shredded cheddar cheese and pour the mixture into the pre-baked crust.
  5. Bake in the preheated oven for 35-40 minutes or until the top is golden and the center is set.
  6. Allow the quiche to cool slightly before slicing; serve warm garnished with fresh herbs.
