  • 2 lbs pork shoulder, cut into chunks
  • 6 firm tomatillos, husked and rinsed
  • 2 jalapeños, seeds removed for less heat
  • 1 medium yellow onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 4 garlic cloves, minced
  • Juice of 1 lime
  • 2 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). On a baking sheet, roast tomatillos and jalapeños until blistered, about 20 minutes.
  2. In a large pot over medium-high heat, sear the pork shoulder in oil until browned on all sides (about 5–7 minutes per side).
  3. Add roasted vegetables, onion, and garlic to the pot; stir well.
  4. Pour in chicken broth and lime juice; bring to a simmer while scraping up any browned bits.
  5. Cover and simmer on low heat for about 2 hours until pork is fork-tender.
