  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain full-fat yogurt
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons coriander powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons garam masala
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk or heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by combining yogurt, garlic, ginger, cumin, coriander, turmeric, garam masala, salt, and pepper in a bowl. Add chicken pieces and coat well. Refrigerate for at least 30 minutes.
  2. Heat oil in a large skillet over medium-high heat. Sear the marinated chicken until golden brown on all sides but not fully cooked. Remove from skillet.
  3. In the same skillet, sauté chopped onions until translucent. Add crushed tomatoes and simmer before mixing in coconut milk or cream.
  4. Return the seared chicken to the skillet and simmer until fully cooked (about 10 minutes). Adjust seasoning as needed.
  5. Serve garnished with fresh cilantro over basmati rice or with naan.
